Abstract
In this audio-only recording, Phillip DeVito - once dubbed the "Caesar Salad King of Portland" - describes how to make a Caesar salad "The Salishan Way." At the beginning of the recording, DeVito states the method in which his dictation should be transcribed; the transcription would enable the dining room captains and waiters at Salishan to use the information for study and cart demonstrations. Training sessions were conducted by DeVito on an ongoing basis.
DeVito was the maître d’hôtel and cellar master for the fine dining and wine program at Salishan Lodge in Gleneden Beach, Oregon from 1972-1994.
